Ingredients
  

  • 1 cup cake flour sifted
  • 1 cup granulated sugar divided
  • 12 large egg whites at room temperature
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, sift together the cake flour and half of the sugar (1/2 cup). Set aside.
  3. In another bowl, beat the egg whites with an electric mixer until foamy.
  4. Add the cream of tartar and salt, then continue beating until soft peaks form.
  5. Gradually add the remaining sugar (1/2 cup) while beating until stiff peaks form.
  6. Gently fold in the flour mixture and vanilla extract until just combined.
  7. Pour the batter into an ungreased tube pan.
  8. Bake for 30-35 minutes or until the cake is golden and springs back when touched.
  9. Invert the pan and let the cake cool completely before removing from the pan.
