Ingredients
  

Bell Pepper Base
  • 4 medium bell peppers sliced in half and seeds removed
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 can black beans rinsed and drained
  • 1 medium tomato diced
  • 1/2 cup jalapeños sliced, optional
  • 1/4 cup green onions chopped
  • 1/4 cup sour cream for serving
  • 1/4 cup guacamole for serving

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 400°F (200°C). Slice the bell peppers in half and remove the seeds.
Assemble the Nachos
  1. Place the bell pepper halves on a baking sheet, cut side up. Layer black beans, shredded cheese, and diced tomatoes on top of each pepper half.
Bake
  1. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Garnish and Serve
  1. Remove from the oven and top with jalapeños, green onions, sour cream, and guacamole. Serve warm.
