Ingredients
  

For the Birria
  • 2 lbs beef chuck roast cut into chunks
  • 1 tbsp olive oil for browning
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 3 dried guajillo chiles stemmed and seeded
  • 2 dried ancho chiles stemmed and seeded
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp salt to taste
  • 1 tsp black pepper to taste
  • 1 cup fresh cilantro for garnish
  • 1 lime cut into wedges for serving
For the Tacos
  • 12 small corn tortillas for serving
  • 1 cup chopped onion for topping
  • 1 cup chopped cilantro for topping
  • 1 cup queso fresco crumbled, for topping

Method
 

Prepare the Birria
  1. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef chunks on all sides.
  2. Add chopped onion and minced garlic, sautéing until softened.
  3. In a blender, combine beef broth, guajillo chiles, ancho chiles, cumin, oregano, salt, and black pepper. Blend until smooth.
  4. Pour the blended mixture over the beef in the Dutch oven. Bring to a simmer, then cover and cook on low heat for 3-4 hours until the beef is tender.
Assemble the Tacos
  1. Once the beef is tender, shred it using two forks.
  2. Heat a skillet over medium heat. Lightly toast the corn tortillas on both sides.
  3. Fill each tortilla with shredded beef, chopped onion, cilantro, and queso fresco.
  4. Serve with lime wedges and a side of the broth for dipping.
