Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 1 tbsp olive oil for cooking
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 2 tsp fajita seasoning store-bought or homemade
  • 4 small flour tortillas for serving
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup guacamole

Method
 

Prepare the Chicken and Vegetables
  1. Preheat the Blackstone griddle over medium-high heat.
  2. In a bowl, combine sliced chicken, olive oil, and fajita seasoning. Toss to coat.
  3. Add the chicken to the griddle and cook for about 5-7 minutes, stirring occasionally until cooked through.
  4. Add sliced bell pepper and onion to the griddle, cooking for an additional 5-7 minutes until vegetables are tender.
Assemble the Fajitas
  1. Warm the flour tortillas on the griddle for about 1 minute on each side.
  2. Serve the chicken and vegetable mixture on the tortillas and top with cheese, sour cream, salsa, and guacamole.
  3. Roll up the tortillas and enjoy your delicious fajitas!
