Carnitas Crockpot

Ingredients
  

Pork
  • 3 pounds pork shoulder cut into large chunks
Spices
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Liquid
  • 1 cup orange juice
  • 1 lime juice freshly squeezed
Aromatics
  • 1 medium onion sliced
  • 4 cloves garlic minced

Method
 

Prepare the Pork
  1. In a large bowl, combine the cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the pork shoulder pieces.
Set Up the Crockpot
  1. Place the sliced onion and minced garlic at the bottom of the crockpot.
  2. Add the seasoned pork shoulder on top of the onions and garlic.
  3. Pour the orange juice and lime juice over the pork.
Cook
  1. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
Shred and Serve
  1. Remove the pork from the crockpot and shred it with two forks. Return the shredded pork to the crockpot and mix with the juices.
  2. Serve in tacos, burritos, or as desired.

Notes

For extra crispy carnitas, spread the shredded pork on a baking sheet and broil for a few minutes until crispy.
