Ingredients
  

Marinade
  • 1 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Chicken
  • 4 pieces chicken thighs bone-in, skin-on

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, chopped rosemary, black pepper, and salt. Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Grill
  1. Prepare the charcoal grill by lighting the charcoal and allowing it to burn until covered with white ash.
  2. Set up the grill for direct heat cooking.
Grill the Chicken
  1. Remove the chicken from the marinade and let excess marinade drip off.
  2. Place the chicken thighs skin-side down on the grill. Grill for about 15-20 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C).
  3. Remove the chicken from the grill and let it rest for 5 minutes before serving.
