Ingredients
  

Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 1 cup mayonnaise adjust to taste
  • 1 cup celery finely chopped
  • 1/2 cup red grapes halved
  • 1/4 cup almonds sliced or chopped
  • 1 teaspoon dijon mustard optional
  • 1 teaspoon lemon juice freshly squeezed
  • to taste salt
  • to taste pepper
Sandwich Assembly
  • 8 slices bread your choice, such as whole grain or white
  • 4 leaves romaine lettuce optional
  • 4 slices tomato optional

Method
 

Prepare the Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, almonds, dijon mustard, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Taste and adjust seasoning as necessary.
Assemble the Sandwich
  1. Lay out 4 slices of bread on a clean surface.
  2. Spoon a generous amount of chicken salad onto each slice.
  3. Top with lettuce and tomato if desired, then place the remaining slices of bread on top to complete the sandwiches.
  4. Cut the sandwiches in half and serve immediately.
