Ingredients
  

Base Ingredients
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 4 large egg yolks

Method
 

Prepare the Base
  1. In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.
  2. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks, whisking constantly to temper them.
  3. Pour the tempered yolks back into the saucepan with the cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and stir in the instant coffee granules and vanilla extract until fully dissolved.
  5. Let the mixture cool to room temperature, then refrigerate until completely chilled, about 2 hours.
Churn the Ice Cream
  1. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  2. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.
