Method
Combine Dry & Wet Mixtures
- Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch or 2-quart ceramic baking dish with cooking spray or butter.
- In a large bowl, whisk together the rolled old-fashioned oats, baking powder, ground cinnamon, pumpkin pie spice, and sea salt. Spread the oat mixture evenly into the prepared baking dish.
- In a separate medium bowl, whisk together the pure pumpkin puree, milk, pure maple syrup, eggs, melted butter, and vanilla extract until completely smooth and emulsified.
Pour, Top with Pecans & Bake
- Pour the pumpkin milk custard slowly and evenly over the oats in the baking dish, giving it a gentle tap or shake so the liquid soaks completely through every layer of oats.
- In a small bowl, toss the chopped pecans with 1 tablespoon of maple syrup. Scatter the pecan halves evenly across the surface of the oatmeal.
- Bake for 32 to 36 minutes until the center is set, edges are lightly golden, and pecans are fragrant and toasted. (The oatmeal will look puffed and slightly soft in the center, but firms up as it rests).
Rest, Slice & Serve Cozy
- Remove from oven and let rest on a wire rack for 5 to 10 minutes before slicing into 6 generous squares.
- Serve warm in shallow breakfast bowls with an extra drizzle of pure amber maple syrup, a pinch of flaky salt, and a generous splash of cold cream, oat milk, or a dollop of Greek yogurt!
