Ingredients
  

Soup Base
  • 1 lb fresh asparagus trimmed and cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil

Method
 

Prepare the Soup
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add the asparagus pieces and cook for about 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes until asparagus is tender.
  4. Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
  5. Return the blended soup to the saucepan, stir in heavy cream, and season with salt and black pepper to taste. Heat through before serving.
