Ingredients

For the Oven-Roasted Squash Foundation
  • 3 lbs butternut squash peeled, seeded, and cut into 1-inch cubes
  • 1 large Honeycrisp or Gala apple peeled, cored, and chopped
  • 1 medium yellow onion chopped into wedges
  • 4 cloves garlic peeled
  • 3 tbsp extra virgin olive oil divided
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
For the Soup Pot & Warm Spices
  • 4 cups low-sodium vegetable or chicken bone broth 100% Halal certified
  • 1/2 cup heavy whipping cream (or full-fat canned coconut milk)
  • 1/2 tsp ground nutmeg freshly grated
  • 1/4 tsp ground cinnamon
  • 1/4 tsp smoked paprika
  • 1 tbsp pure maple syrup balances earthy squash flavor
For the Crispy Toppings & Serving
  • 1/3 cup raw green pepitas (pumpkin seeds) toasted in skillet with olive oil & smoked paprika
  • 8 fresh whole sage leaves fried in olive oil until crackling crisp
  • 4 slices crusty artisan sourdough bread grilled with olive oil for dipping

Method

Caramelize Squash & Aromatics
  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Spread cubed butternut squash, apple wedges, onion, and garlic cloves across the baking sheet. Drizzle with 2 tablespoons olive oil and season with salt and pepper. Toss to coat evenly. Roast for 30 to 35 minutes, stirring once halfway through, until squash is fork-tender with golden caramelized browned edges.
Simmer & Puree Until Velvety
  1. Transfer roasted squash, apple, onion, and soft roasted garlic into a large heavy Dutch oven. Pour in broth, nutmeg, cinnamon, smoked paprika, and maple syrup. Bring to a gentle simmer over medium heat for 5 minutes to meld the flavors.
  2. Using an immersion hand blender directly in the pot (or working in batches in a high-speed countertop blender), puree the soup on high speed for 2 minutes until luxuriously smooth and velvety. Stir in heavy cream (or coconut milk) and adjust salt and pepper to taste.
Toast Pepitas & Garnish
  1. In a small skillet over medium heat, heat 1 tablespoon olive oil. Add sage leaves and fry for 30 to 45 seconds until crispy and dark green; drain on paper towels. In the same hot oil, add pumpkin seeds and a pinch of smoked paprika and salt. Toast for 2 minutes until seeds pop and turn golden.
  2. Ladle steaming soup into warm shallow bowls. Swirl with extra cream, top with a generous mound of crunchy toasted pepitas and crispy fried sage, and serve with thick toasted sourdough bread!
