Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes or any waxy potatoes
Seasoning
  • 1 teaspoon Salt for boiling
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Black Pepper
Oil
  • 1/4 cup Olive Oil for drizzling
Garnish
  • 2 tablespoons Fresh Parsley chopped

Method
 

Prepare the Potatoes
  1. Place the potatoes in a pot and cover with water. Add salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.
Smash and Season
  1. Preheat the oven to 425°F (220°C). Drain the potatoes and let them cool slightly. On a baking sheet, place the potatoes and gently smash each one with a fork.
  2. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, paprika, salt, and black pepper.
Bake
  1. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
Serve
  1. Remove from the oven, garnish with fresh parsley, and serve hot.

Notes
