Ingredients
  

Pasta Salad Base
  • 8 oz pasta (fusilli or rotini) cooked and cooled
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Prepare the Vegetables
  1. While the pasta is cooking, chop the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooled pasta, chopped vegetables, and dressing. Toss until everything is evenly coated.
Serve
  1. Chill the salad in the refrigerator for at least 30 minutes before serving. Enjoy!
