  • 4 medium Russet potatoes sliced
  • 1 medium Yellow onion sliced
  • 2 cloves Garlic minced
  • 4 tablespoons Butter for sautéing
  • 1/4 cup All-purpose flour
  • 2 cups Milk
  • 2 cups Cheddar cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 cup Bread crumbs for topping
  • 1/4 cup Fresh parsley chopped

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, melt butter over medium heat. Add sliced onion and minced garlic, cooking until soft.
  3. Stir in flour and cook for 1-2 minutes, then gradually whisk in the milk.
  4. Continue cooking, stirring, until the sauce thickens.
  5. Remove from heat and mix in cheddar and parmesan cheeses until melted.
  6. In a greased baking dish, layer the sliced potatoes, pouring cheese sauce over each layer.
  7. Top with bread crumbs and fresh parsley.
  8. Cover with foil and bake for 40 minutes, then remove foil and bake for an additional 10 minutes until golden brown.
