Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup mashed bananas
  • 1 cup crushed pineapple
  • 1/2 cup chopped pecans or walnuts optional
  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, combine the flour, granulated sugar, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix the vegetable oil and eggs. Add the mashed bananas, crushed pineapple, and chopped nuts (if using).
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the frosting by beating together the cream cheese and unsalted butter until smooth.
  7. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  8. Once the cake is cooled, spread the cream cheese frosting evenly on top.

Notes

Feel free to swap out the nuts for chocolate chips or shredded coconut to amplify flavor. Adding lemon zest to the frosting will give it a nice zing.
