Ingredients

For the Spiced Apple Filling
  • 6 large firm apples (3 Honeycrisp + 3 Granny Smith) peeled, cored, and sliced 1/4-inch thick
  • 2 tbsp pure maple syrup (or brown sugar)
  • 1 tbsp fresh lemon juice prevents browning & balances sweetness
  • 1 tbsp arrowroot powder or cornstarch thickens natural apple juices into glossy caramel
  • 1.5 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1 tsp pure vanilla extract alcohol-free (halal certified)
For the Nutty Brown Butter Oat Streusel
  • 1/2 cup (1 stick) unsalted European butter browned in skillet until nutty and golden amber
  • 1 cup rolled old-fashioned oats certified gluten-free if needed
  • 1/2 cup all-purpose flour (or almond flour)
  • 1/2 cup dark brown sugar firmly packed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp flaky sea salt (Maldon) for rich sweet-salty finish
  • 4 scoops vanilla bean ice cream for serving warm from the oven

Method

Brown the Butter & Prep Apples
  1. Preheat your oven to 350°F (175°C). Lightly butter a 9x9-inch or 2-quart ceramic baking dish.
  2. Melt 1 stick of butter in a light-colored skillet over medium heat. Swirl frequently as it foams and sizzles for 4 to 5 minutes until milk solids turn toasty golden brown with a fragrant nutty aroma. Remove immediately from heat and pour into a heatproof bowl to stop cooking. Cool for 5 minutes.
  3. In a large mixing bowl, toss sliced apples with maple syrup, lemon juice, arrowroot/cornstarch, cinnamon, nutmeg, and vanilla until all slices are evenly coated. Spread apples into an even layer in the prepared baking dish.
Mix Oat Streusel & Assemble
  1. In a medium bowl, whisk together rolled oats, flour, dark brown sugar, cinnamon, and sea salt. Pour in the cooled brown butter. Stir with a fork until large, crumbly clusters form.
  2. Scatter the oat streusel clusters generously over the apples, making sure the fruit is completely blanketed from edge to edge.
Bake to Bubbling Golden Perfection
  1. Bake for 38 to 42 minutes until the spiced apple juices are bubbling vigorously around the edges and the oat streusel topping is deeply golden brown and crisp.
  2. Let rest for 10 minutes to allow the bubbling caramel juices to thicken slightly. Spoon into bowls and top with generous scoops of vanilla bean ice cream while piping hot!
