Method
Preheat & Cut Puff Pastry
- Preheat your oven to 375°F (190°C). Generously grease a 24-cup mini muffin tin with nonstick cooking spray or melted butter.
- Unroll the thawed puff pastry sheet onto a lightly floured surface. Roll gently with a rolling pin into a 10x15-inch rectangle. Using a pizza cutter or sharp knife, cut into 24 equal squares (approximately 2.5 x 2.5 inches each).
- Press each pastry square gently into the cavities of the mini muffin tin, allowing the four pastry corners to point upward slightly above the rim.
Fill & Top
- Place one cube of Brie cheese in the center of each puff pastry cup.
- Spoon 1 rounded teaspoon of spiced cranberry sauce directly over the Brie cube. Top each with a couple of pecan pieces.
Bake to Golden Flaky Perfection
- Bake for 14 to 16 minutes until the puff pastry edges are puffed, crisp, and deep golden brown, and the Brie cheese is bubbling and molten.
- Remove from oven and let rest in the pan for 5 minutes so the cheese sets slightly. Use a small offset spatula or butter knife to lift the bites onto a serving platter.
- Drizzle generously with wildflower honey, scatter with fresh rosemary needles, and sprinkle with a pinch of flaky sea salt. Serve warm!
