Ingredients
  

Vegetables
  • 2 medium cucumbers sliced
  • 2 medium tomatoes diced
  • 1 small red onion thinly sliced
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
Toppings
  • 1 cup feta cheese crumbled
  • 1/4 cup black olives sliced

Method
 

Prepare the Vegetables
  1. Slice the cucumbers, dice the tomatoes, and thinly slice the red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
Combine and Serve
  1. In a large mixing bowl, combine the cucumbers, tomatoes, red onion, feta cheese, and olives. Drizzle with the dressing and toss gently to combine.
  2. Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
