Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts about 6 ounces each
  • 1/4 cup olive oil for marinating
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Sandwich Assembly
  • 4 slices whole grain bread
  • 4 slices cheddar cheese or cheese of choice
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/4 cup mayonnaise optional

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
Assemble the Sandwich
  1. Toast the bread slices on the grill for 1-2 minutes. Place grilled chicken on one slice of bread, top with cheese, lettuce, tomato, and mayonnaise. Cover with another slice of bread.
Serve
  1. Cut the sandwich in half and serve immediately.
