Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 cup fermented sauerkraut for gut health
  • 1 avocado diced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey optional
  • 1 teaspoon mustard
  • to taste salt
  • to taste pepper

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
Mix Salad
  1. In a mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, sauerkraut, and avocado.
Make Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, mustard, salt, and pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately or chill in the refrigerator for 30 minutes before serving.
