Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a medium pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Mix Salad
  1. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Prepare Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
Combine
  1. Pour dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to let flavors meld.
