Ingredients
  

Chicken and Marinade
  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons mirin Japanese sweet rice wine
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger freshly grated
  • 1 teaspoon garlic minced
  • 1 teaspoon black pepper
Vegetables
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 tablespoons vegetable oil for cooking

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, mirin, sesame oil, ginger, garlic, and black pepper. Add the chicken pieces and marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side until fully cooked.
Cook the Vegetables
  1. In a large skillet, heat vegetable oil over medium heat. Add the zucchini, bell pepper, and onion. Stir-fry for about 5-7 minutes until tender.
Serve
  1. Serve the grilled chicken alongside the stir-fried vegetables. Enjoy your hibachi chicken!
