Ingredients
  

Taco Meat
  • 2 cups leftover taco meat seasoned ground beef or turkey
Vegetables
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup corn frozen or canned
Taco Seasoning
  • 1 tablespoon taco seasoning adjust to taste
Tortillas
  • 4 pieces tortillas flour or corn
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup lettuce shredded

Method
 

Prepare the Vegetables
  1. Dice the bell pepper and onion. If using frozen corn, thaw it beforehand.
Cook the Mixture
  1. In a skillet over medium heat, add the leftover taco meat, diced vegetables, corn, and taco seasoning. Cook for about 10 minutes, stirring occasionally, until heated through.
Warm the Tortillas
  1. In another skillet, warm the tortillas for about 1 minute on each side until soft.
Assemble the Tacos
  1. Place a portion of the meat mixture onto each tortilla. Top with shredded cheese, sour cream, salsa, and lettuce.
Serve
  1. Serve immediately while warm and enjoy your delicious tacos!
