A refreshing dessert made with ripe mangoes, sago pearls, and coconut milk, perfect for warm weather.

Ingredients
  

Sago Pearls
  • 1 cup sago pearls soaked in water for 30 minutes
Mango
  • 2 medium ripe mangoes peeled and diced
Coconut Milk
  • 1 can coconut milk full-fat for richness
Sugar
  • 1/2 cup granulated sugar adjust to taste
Water
  • 4 cups water for cooking sago

Method
 

Prepare Sago
  1. In a pot, bring 4 cups of water to a boil. Add the soaked sago pearls and cook for about 30 minutes, stirring occasionally until translucent.
  2. Once cooked, drain the sago using a strainer and rinse under cold water to stop the cooking process.
Make Mango Mixture
  1. In a blender, combine the diced mangoes and half of the coconut milk. Blend until smooth.
  2. In a mixing bowl, combine the blended mango mixture, remaining coconut milk, and sugar. Stir until the sugar is dissolved.
Combine and Serve
  1. Add the cooked sago pearls to the mango mixture and stir well to combine.
  2. Serve in individual bowls, garnished with additional mango pieces if desired.
