Ingredients
  

Pasta
  • 12 oz Fettuccine or Spaghetti or any pasta of choice
Vegetables
  • 1 cup Bell peppers sliced, mixed colors
  • 1 cup Zucchini sliced
  • 1 cup Carrots sliced
  • 1 cup Cherry tomatoes halved
  • 1 cup Broccoli florets
Sauce
  • 3 tbsp Olive oil extra virgin
  • 2 cloves Garlic minced
  • 1 cup Vegetable broth
  • 1 tsp Italian seasoning
Garnish
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp Fresh basil chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the bell peppers, zucchini, carrots, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Stir in the cherry tomatoes and cook for an additional 2 minutes.
Combine
  1. Pour in the vegetable broth and Italian seasoning. Bring to a simmer and let cook for 2-3 minutes.
  2. Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
Serve
  1. Serve hot, garnished with grated Parmesan cheese and fresh basil.
