Ingredients
  

  • 1 can Pineapple slices
  • 1/2 cup Maraschino cherries
  • 1/2 cup Brown sugar
  • 1/4 cup Unsalted butter for greasing and batter
  • 1 1/2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Milk
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C) and grease the baking pan with unsalted butter.
  2. Arrange the pineapple slices and maraschino cherries in the bottom of the pan.
  3. In a bowl, combine brown sugar with some of the butter and spread it over the fruit.
  4. In another bowl, mix the all-purpose flour, granulated sugar, baking powder, and salt.
  5. Add the milk, eggs, and vanilla extract to the dry ingredients and mix until smooth.
  6. Pour the batter over the arranged fruit in the pan.
  7. Bake in the preheated oven for 40 minutes or until golden brown.
  8. Allow to cool slightly before inverting onto a serving plate.
