Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced any color
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
Mix Salad
  1. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss to combine. Adjust seasoning if necessary.
Serve
  1. Serve chilled or at room temperature.
