Ingredients
  

Pasta
  • 12 oz fettuccine or any pasta of choice
Salmon
  • 4 fillets salmon skinless
Cream Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried basil
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Cooking the Salmon
  1. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper. Cook the salmon for about 4-5 minutes on each side, or until cooked through. Remove from skillet and set aside.
Making the Cream Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, parmesan cheese, lemon juice, and dried basil. Cook until the sauce thickens, about 5 minutes.
Combining Ingredients
  1. Add the cooked pasta to the cream sauce and toss to coat. Flake the cooked salmon into large pieces and gently fold it into the pasta.
Serving
  1. Serve the pasta in bowls, garnished with chopped parsley.

Notes

For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy alternative.
