  • 2 cups shredded rotisserie chicken
  • 1 cup diced bell peppers use assorted colors for best presentation
  • 1 can (15 oz) black beans drained and rinsed
  • 1/2 cup sour cream for dipping

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a bowl, mix together chicken, bell peppers, black beans, and half of the cheese.
  3. Lay one tortilla on the sheet pan, fill half with the mixture, sprinkle more cheese on top, then fold over.
  4. Repeat until all tortillas are filled and assembled on the pan.
  5. Bake for 15-20 minutes or until golden brown and crispy.
  6. Slice into triangles and serve with sour cream.
