Tacos al Pastor

Tacos al Pastor is a traditional Mexican dish made with marinated pork, cooked on a vertical spit and served in soft corn tortillas with fresh toppings.

Ingredients
  

Marinade
  • 2 lbs pork shoulder sliced thinly
  • 3 tablespoons achiote paste
  • 1 cup pineapple juice
  • 1 tablespoon white vinegar
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon adobo sauce
Tacos
  • 12 pieces corn tortillas warmed
  • 1 cup fresh pineapple diced
  • 1 cup onion finely chopped
  • 1 cup cilantro chopped
  • 1 lime lime cut into wedges

Method
 

Marinate the Pork
  1. In a blender, combine achiote paste, pineapple juice, white vinegar, garlic, cumin, oregano, salt, black pepper, and adobo sauce. Blend until smooth.
  2. In a large bowl, combine the sliced pork with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Cook the Pork
  1. Preheat the vertical spit or grill to medium-high heat.
  2. Skewer the marinated pork onto the spit, layering with pieces of pineapple if desired.
  3. Cook for about 1.5 hours, turning occasionally, until the pork is cooked through and slightly charred.
Assemble the Tacos
  1. Remove the pork from the spit and let it rest for a few minutes before slicing it thinly.
  2. Serve the sliced pork on warmed corn tortillas topped with diced pineapple, chopped onion, and cilantro. Squeeze lime juice over the top.

Notes

For a more authentic taste, consider using a vertical spit (trompo) for cooking the pork.
