Method
Prepare the tomatoes
- Preheat the oven to 180°C (350°F). Cut the tops off the tomatoes and scoop out the insides, reserving the flesh.
Make the stuffing
- In a skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the ground beef and cook until browned. Stir in the reserved tomato flesh, breadcrumbs, parsley, thyme, salt, and pepper.
Stuff the tomatoes
- Fill each hollowed tomato with the meat mixture, pressing down gently to pack it in.
- Place the stuffed tomatoes in a baking dish and sprinkle grated cheese on top.
Bake
- Bake in the preheated oven for about 30 minutes, or until the tomatoes are tender and the cheese is golden.

For a vegetarian version, substitute ground meat with a mixture of lentils and mushrooms.
