Ingredients
  

For the stuffing
  • 4 large tomatoes ripe and firm
  • 300 g ground beef or ground turkey for a lighter option
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 100 g breadcrumbs preferably fresh
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp olive oil for sautéing
  • 1 tsp salt
  • 1 tsp black pepper
For topping
  • 50 g grated cheese such as Gruyère or Parmesan

Method
 

Prepare the tomatoes
  1. Preheat the oven to 180°C (350°F). Cut the tops off the tomatoes and scoop out the insides, reserving the flesh.
Make the stuffing
  1. In a skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  2. Add the ground beef and cook until browned. Stir in the reserved tomato flesh, breadcrumbs, parsley, thyme, salt, and pepper.
Stuff the tomatoes
  1. Fill each hollowed tomato with the meat mixture, pressing down gently to pack it in.
  2. Place the stuffed tomatoes in a baking dish and sprinkle grated cheese on top.
Bake
  1. Bake in the preheated oven for about 30 minutes, or until the tomatoes are tender and the cheese is golden.

Notes

For a vegetarian version, substitute ground meat with a mixture of lentils and mushrooms.
