Ingredients

For the Tangy Creamy Grinder Dressing
  • 1/2 cup mayonnaise high-quality or avocado oil mayo
  • 2 tbsp red wine vinegar
  • 1 tbsp pepperoncini juice from the jar for authentic tang
  • 2 cloves garlic finely minced or grated
  • 1 tsp dried Italian herb seasoning oregano, basil, and thyme
  • 1/2 tsp red pepper flakes adjust to heat preference
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly cracked black pepper
For the Chopped Grinder Salad
  • 3 cups iceberg lettuce thinly shredded for signature crunch
  • 1/3 cup sliced pepperoncini drained and chopped
  • 1/4 cup red onion very thinly shaved
  • 1/3 cup grated Parmesan cheese freshly grated Parmigiano-Reggiano
For the Sandwich Assembly
  • 2 large crusty Italian hoagie rolls or sub rolls, split lengthwise
  • 6 slices provolone cheese deli sliced
  • 6 slices halal turkey ham or turkey pastrami thinly sliced
  • 6 slices halal roast beef or smoked turkey breast thinly shaved
  • 1 large beefsteak tomato thinly sliced and lightly salted

Method

Prepare the Tangy Creamy Dressing
  1. In a medium mixing bowl, whisk together the mayonnaise, red wine vinegar, pepperoncini juice, minced garlic, dried Italian herbs, red pepper flakes, sea salt, and black pepper until silky smooth and emulsified.
Toss the Viral Chopped Grinder Salad
  1. Add the thinly shredded iceberg lettuce, chopped pepperoncini, shaved red onion, and grated Parmesan cheese to the dressing bowl. Toss vigorously with tongs until every shred of crisp lettuce is coated in creamy, tangy dressing. Set aside for 5 minutes so flavors meld.
Toast the Hoagie Rolls & Melt the Cheese
  1. Preheat your oven broiler to high (or toaster oven). Split the hoagie rolls open on a baking sheet. Layer the bottom and top halves with provolone cheese and your sliced halal deli meats (turkey pastrami and smoked turkey breast). Broil for 2 to 3 minutes until the cheese is bubbling, melted, and the bread edges turn golden and crusty.
Layer, Assemble & Serve Restaurant-Style
  1. Remove the toasted sub rolls from the oven. Arrange seasoned tomato slices over the warm melted cheese. Pile a generous mountain of the creamy grinder salad onto each sandwich. Close the roll firmly, slice in half diagonally with a sharp serrated knife, and serve immediately!
