Ingredients

For the Creamy Cheesy Dip Base
  • 16 oz (2 blocks) cream cheese softened to room temperature
  • 1/2 cup sour cream full fat for rich texture
  • 1/3 cup mayonnaise high quality real mayo
  • 1.5 cups sharp cheddar cheese freshly grated, divided
  • 1.5 cups pepper jack cheese freshly shredded for melty spice, divided
  • 4 large fresh jalapeños seeded and finely minced (leave seeds for extra heat)
  • 1/4 cup pickled jalapeño slices diced for tangy briny punch
  • 1/2 cup crispy halal beef bacon bits cooked crisp and crumbled (100% pork free)
  • 3 cloves garlic finely minced
  • 1/2 tsp smoked paprika, onion powder, and fine sea salt
For the Golden Buttery Panko Crust
  • 2/3 cup Japanese panko breadcrumbs for superior crunch
  • 2 tbsp unsalted butter melted
  • 2 tbsp grated parmesan cheese
  • 2 tbsp fresh scallions (green onions) thinly sliced for garnish

Method

Prep the Oven & Creamy Base
  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch cast-iron skillet or 2-quart ceramic baking dish with olive oil or butter.
  2. In a large mixing bowl, beat the softened cream cheese, sour cream, and mayonnaise together with a wooden spoon or hand mixer until completely smooth and lump-free.
  3. Fold in 1 cup of sharp cheddar, 1 cup of pepper jack, the minced fresh jalapeños, pickled jalapeños, half of the crispy beef bacon, minced garlic, smoked paprika, onion powder, and sea salt until thoroughly combined.
Assemble & Add Crunch
  1. Spread the creamy dip evenly into the prepared skillet. Sprinkle the remaining 1/2 cup cheddar and 1/2 cup pepper jack across the surface.
  2. In a small bowl, stir together panko breadcrumbs, melted butter, and parmesan. Scatter the buttery panko mixture evenly over the top of the cheese layer.
Bake to Molten Perfection
  1. Bake for 18 to 22 minutes until the edges are vigorously bubbling and the cheese is molten throughout. Switch oven to broil on HIGH for 1 to 2 minutes until the panko topping is deeply toasted and golden brown.
  2. Remove carefully from the oven. Garnish with remaining crispy beef bacon, extra jalapeño wheels, and sliced scallions. Rest for 5 minutes, then serve hot with tortilla chips, crusty baguette slices, and celery sticks.
